Toltec Brewing announces it’s big opening of the brewery and the blended burger project.
Kaylynn McKnight is Toltec’s, Brew Master. She used to help her father homebrew in the East Mountains of Albuquerque.
She has been to many beer festivals and competitions across the country and came home with several accolades recognizing the excellence of her craft. She has worked for local breweries including La Cumbre Brewing Co. and later became head brewer at Nexus Brewery. Now she has taken on the honor of being the founding brewer of Toltec Brewing Company. With a desire for challenge and a passion to match, she looks forward to sharing a pint with you and your family here at Toltec Brewing.
Davis Ruiz is the Executive Chef.
He has worked in award-winning restaurants in Aspen, Colorado; San Jose, California; Yosemite, California; and Albuquerque, New Mexico. He was inspired to be a chef by the summers he spent on his grandmother’s farm in Northern California, where he helped her tend the farm and cook everything from homemade tortillas to duck confit. As a chef today, he promotes food education and strives to teach people about the connection between food and farming. Ruiz has won Albuquerque’s Sustainable Seafood Competition and Salad Mixer Competition and was nominated for New Mexico Chef of the Year by the New Mexico Restaurant Association. In 2016 he was featured on the Food Network’s popular cooking show “Chopped.” In 2017 he was featured on the Food Network’s show “Guy Fieri’s Family Road Trip.” Chef David also won the 2017 “Duke It Out” challenge for the People’s Choice Entree and the Best Entree. He is also the co-founder of 505 Food Fights, a grassroots chef competition that fosters community in Albuquerque’s culinary industry.
