The County Line spotlights its Mexican deviled eggs

The County Line of Albuquerque is known for its legendary Texas BBQ and scenic views as the famous roadhouse is tucked against the Sandia Mountains. The establishment also boats a free music series that kicks off on May 16.

The restaurant is responsible for a recipe for delicious Mexican deviled eggs that are sure to be the star attraction of any spring event. General Manager of The County Line, Steve Renfro, prepared them on the set of New Mexico Living.

The recipe is incredibly easy and is sure to please the entire family.

Ingredients

  • Hard Boiled Eggs
  • Fine Shredded Cheese
  • Chipotle Mayo
  • Salsa
  • Sour Cream
  • Salt
  • Black Pepper
  • Green onions (Finely minced)
  • Jalapeno Bacon (Garnish)
  • Cayenne Pepper (Garnish)

Boil the eggs, using a fork to mash the yolks until they are fine. Combine all the ingredients, except for the green onions and garnish, and blend well. Fold in the green onions and place the mixture in a pastry bag and pipe into egg halves. Sprinkle with jalapeno bacon and lightly dust with cayenne and serve.
