Elaine’s in Nob Hill has new items on the menu.

Patrons say it is simply delicious, as it uses locally sourced ingredients from New Mexico farms and ranches.

Ian Cofer is a new chef from San Antonio, Texas. He displayed some prepared food from the restaurant on New Mexico Living.

Ingredients: Seared Day Boat Scallops

  • 2 lbs fish bones boiled and rinsed.
  • 1 white onion
  • Quartered 1 head fennel
  • Quartered 2 large carrots
  • Peeled and chopped peppercorn
  • Bay leaf

Recipe: Saute veggies with bones till soft, add tomato paste and continue to cook about two minutes. Next cover with water or stock of choice, bring to a boil and simmer. Once reduced, blend to with fine consistency while adding one pound of cubed butter. strain and your done.
