Dietitian Jessika Brown from Nearly Nutritious talked about some Pumpkin recipes and why they are so healthy for us.

Below are some pumpkin recipes:

Fall Salad:

  • Roasted butternut squash
  • Fresh Spinach
  • Pumpkin Seeds
  • Feta Cheese
  • Dried Cranberries
  • Drizzle Pumpkin Seed Oil (add chicken if a consuming as a meal)

Pumpkin Bread:

  • 2 cubes of butter, softened (1 cup)
  • 2 cups sugar
  • 2 eggs
  • 1 15 oz. can pumpkin puree
  • ½ cup sour cream OR full fat plain Greek yogurt
  • 2 cups (whole wheat) flour
  • ½ tsp. salt
  • ½ tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. ground cloves
  • 1 tsp. cinnamon
  • ½ tsp. nutmeg
