Baja Shrimp Tacos with Precision On The Go

Precision On The Go chef and owner Andrew “Chef Beast” Bustos stopped by the studio with his early Cinco de Mayo celebration: Baja Shrimp Tacos.

To tackle this dish at home, follow Chef Bustos’ recipe below: 

Baja Shrimp Tacos

  • 12 ea 21/25 Shrimp p&d
  • 2 ea Jalapenos
  • 4 ea Limes (for juice)
  • 6 ea White Corn Tortillas
  • 1 oz Cotija Cheese

Pico de Gallo

  • 2 ea Tomatoes
  • 2 ea Jalapenos
  • 1/4 Onion minced
  • 1 bunch Cilantro

4 oz Oil for tortillas

Start by marinating the shrimp in salt pepper garlic a sliced jalapeno and some chopped cilantro set aside for a couple hours.

For the pico de gallo dice the tomatoes jalapenos and onions mixed with cilantro squeeze two limes worth of juice seasoned with salt and pepper.

Heat pan with oil once it reaches roughly a hundred and forty degrees you can fry tortillas until tender placing between two paper towels to soak up the extra oil.

Heat another pan for the shrimp almost to smoke point, sauteed shrimp until opaque squeeze two more lines worth of juice into the pan Once close to done place in tortillas top with Cotija cheese and pico de gallo. Enjoy!
